The concept is simple: one premium ingredient, charcoal-grilled over binchōtan, served the moment it leaves the fire. The menu changes each week based on what the chef finds at the market before dawn.
Trained in Lyon, returned to Japan. The French kitchen gave the discipline; Tokyo gave back the instinct. What you taste here is the result of both.
The wine list is Japanese, natural, and small-producer only. We pour by the glass from whatever is open. The list changes as bottles finish. Each one poured by a chef who knows the producer.
